CREAMY CHICKEN, ORZO RICE, MUSHROOMS AND SPINACH MIX
ALL IN ONE DISH
I got this recipe from a well-known South African chef, Lorna, and I tried it. It tasted fantastic so I decided to share it with all of you. It is quite a simple dish for lunch or dinner. It is a highly nutritious food. Try this at home and trust me, you will love it as well.
INGREDIENTS
Olive oil
Brown chicken breasts
1 onion diced
Portabellini mushrooms
1 tbs thyme
1 tbs Parsley
1 tbs crushed garlic
1 cup of chicken stock/ wine vinegar/ white wine
1 cup sundried tomatoes
150g baby spinach
1/2 cup coconut milk
1/2 cup of pasta water
Parboiled orzo/ pasta rice
METHOD
Put 2 tbs of olive oil in a saucepan.
Seasoned chicken breast and fry till brownish gold
Remove chicken and set aside
Dice the onion and place in the saucepan
Followed by the Portabellini mushrooms, thyme, crushed garlic, and parsley.
Stir everything together.
Deglaze pan with white wine or chicken stock.
When slightly cooked, add sundried tomatoes and the baby spinach.
Add the parboiled orzo combined with the coconut milk.
Season and add salt to taste, followed by the pasta water.
Place the chicken back into the pan
Close the saucepan and allow to cook for 10 minutes.
Garnish and serve
