CREAMY CHICKEN, ORZO RICE, MUSHROOMS AND SPINACH MIX

ALL IN ONE DISH


I got this recipe from a well-known South African chef, Lorna, and I tried it. It tasted fantastic so I decided to share it with all of you. It is quite a simple dish for lunch or dinner. It is a highly nutritious food. Try this at home and trust me, you will love it as well.

INGREDIENTS

Olive oil

Brown chicken breasts

1 onion diced

Portabellini mushrooms

1 tbs thyme

1 tbs Parsley

1 tbs crushed garlic

1 cup of chicken stock/ wine vinegar/ white wine

1 cup sundried tomatoes

150g baby spinach

1/2 cup coconut milk

1/2 cup of pasta water

Parboiled orzo/ pasta rice

METHOD

  • Put 2 tbs of olive oil in a saucepan.

  • Seasoned chicken breast and fry till brownish gold

  • Remove chicken and set aside

  • Dice the onion and place in the saucepan

  • Followed by the Portabellini mushrooms, thyme, crushed garlic, and parsley.

  • Stir everything together.

  • Deglaze pan with white wine or chicken stock.

  • When slightly cooked, add sundried tomatoes and the baby spinach.

  • Add the parboiled orzo combined with the coconut milk.

  • Season and add salt to taste, followed by the pasta water.

  • Place the chicken back into the pan

  • Close the saucepan and allow to cook for 10 minutes.

  • Garnish and serve
